This is one of those jobs where you wished you hadn't answered the phone. 120 people, customer wants pulled pork, brisket and 5, yes 5 sides. Beands, potato salad, coleslaw, green beans, and fried okra. What quantities of sides would you provide. Also wants me to fill 120 little mason jars (doesn't know size, she thinks 2 ounce, I assume half pints) with sauce as party favors for guest to take home. Also wants tea, how much for 120 people.

And just for fun, what would you charge for such an event?

Thanks,

Robert

If you want the job price it at $25 per each. Figuring meat and sides is the easy part. The aggravation of a wedding reception is the problem. If you don't want it price it higher and just say no. DO NOT get roped into doing ANY decorations!! I lost my ass on a job one time and came out $25 per table short -- fortunately I liked the bride/groom and just considered it a wedding present.

**Edit: I changed my mind...figure minimum $30 per person. Are you cooking on-site? Are you serving? The fried okra caught my eye...are you needing to by the oil and fryer or do you have that stuff on hand. A lot of us BBQ types don't have fryers.***Wedding receptions are billed high for a reason...they are PITA.

I'd take this event all day long and for the meats and sides and tea I would be at about $19pp. Filling the mason jars with sauce, are you canning? Legal to do so? I would stay away from this if I was not. I somewhat agree with Chad's comments that you need to be careful getting into decorating and other things like rentals and bussing tables etc. Not that you should not do them but be careful because you can spend a fortune on these things. I did a wedding this summer and the rental items like plates, silverware, linens, servers, serving trays and jacks, glasses etc came to over $20 per person not counting the food.

I'd cook about #60 lbs each raw meats , 3-4 gal cole slaw, 2.5-3 pans beans, 3-4 gallons potato salad, never done okra but I'b probably do 2 pans. Tea is hard for me to figure, it's all over the place from one event to another. If beer, wine is there you will go through a lot less but I'd figure at least 16oz per person.
