Did my first pork butt today and made pulled pork. Came out awesome. Going to go pick up more while they're on sale. 6 1/2 lb butt on wsm at 275 for about 5 1/2 hours. foiled once temps were around 160.

Nothing wrong with that result. Nice job!
 
Nope. The pork butt already was separated a little bit from the butcher. There was a piece that was a little loose which is probably the part that appears butterflied.

Thanks for the comments and tips I've been able to pickup here. Very happy with the results.
