The jalapino peppers left a GREEN & BITTER taste in my mouth. I used a fresh pepper. Removed the seeds & viens. Diced it up real small.

Would a dried jalapino pepper taste better? Do the even sell dried jalapino peppers?
 
I saute the jalapenos first, takes some of the bitterness off.
 
Sorry to hear that. I dice my peppers a bit bigger, about 1/2" or so and they tasted great.

I use Bacon fat in my corn bead since I have to melt it to add it I saute mine in Bacon fat or I roast them first If I don't have any Bacon fat rare but it has happened
