To help everyone get in the mood for the upcoming "Your Signature Dish Throwdown", which opens this Friday, I thought I'd start this thread.

This is a great throwdown category, so let's see some of the stuff YOU are known for. If you have a particular story or recipe to include with your signature dishes, all the better!

I'll start with a couple of mine:

Just a simple rack of BB ribs, smoked on the hotter side with NO foil, dry rubbed with one of my homemade rubs.

Marinated, then dry rubbed grilled Lamb Chops is another big favorite:

Beef Filet cooked reverse-sear style is always a huge hit:

Lamb shoulder Cooked in clay

Wrap the lamb in alfoil, then in the clay mix,rubbing over with water to seal properly..

Back in the oven, flat chat for a 1/2 hour to set the clay.

then in a slow oven for about 8 hours,running a snake type heatbead set up.
Set and forget,
Around 75 to 100c..

My goodness, Brethren! Astounding-- my jaw is dropped!

I don't know if this is my signature dish, but it certainly is the one for which I have a reputation-- my hickory smoked homemade beef jerky.

This is what this place has done for me. When I 1st dropped in, a Burger or Steak was my BBQ.

I have learned more from the people here than I can even remember at times. With this knowledge I have almost perfected the below cooks, at least to my family and friends.
