My prime was a 12lb and 15lb on the select, pulled the prime about 10 hours at 250 and 11.5 on the select. Both probed tender and wrapped in BP at about 180
It was late so I did not get "just off the pit" (1 hour rest) pictures. These are todays pics. All I can say is the prime was about as good as I could ever want. Super moist, tender, good smoke, and S&P bark. As a next day brisket it did tighten up a bit but still better than most.
The Select was tender but lacked the moisture and not as rich flavor (less fat) also had some inconsistence in the texture. Overall worthy of Texas Brisket. I will do a nice choice that is waiting for the pit next but I am getting a little burnt out on brisket. (ok so shoot me)

:-D Enjoy

Burnt out on brisket? You must be speaking a different language, because that isn't translating right to me. :-D

it was blasphemy, I know, but I will be in church tomorrow.

I'll take some brisket....lol
What was the price difference between the prime and select?

I paid 2.99 for the prime and 2.35 for the select. I will not go back to select but will stick with the prime and choice. I think the choice was 2.55-65. This was at RD

I wish I could find a prime brisket around here. The best I can get is choice.
