Fast Food at home on the Kamado Joe

We occasionally go to a fast food place called El Pollo Loco. For being fast food it is actually pretty good. The closest one is not all that close so we occasionally make it at home.

You can find versions of their signature chicken recipe all over the net. I used two factors in making my version tonight. Personal preference and ingredients on hand.

2tbsp white wine vinegar
3 cloves minced garlic
2 tsp sea salt
4 or 5 twists on the pepper mill
2 tsp dry oregano
1 tbsp Taco Bell taco sauce
2 small cans pineapple juice
Juice of 1 lemon
2 tbsp vegetable oil
Few squirts of yellow food dye

Added some beans, rice, a tortilla and a soda just like the restaurant.

Great looking cook. I might have to do that on some chicken as a change up from what I normally do!

I agree with you that El Pollo Loco serves up good food for a fast food joint. About the only place I go to. Police favorite joint on the go as well.
 
Looks great!

We love pollo loco chicken, but the sides are pretty blah. If they had good side dishes, I'd eat there all the time.

If I could replicate the chicken at home...oh man...it's definitely on the to-do list now.
 
Thanks everyone. I has some hickory left from a prior cook so the skin absorbed the smoke which tasted great for me but overpowered the marinade. The injected meat however came out very moist and you could taste the flavors of the marinade.
