Not exactly Q'ue, but a side worth mentioning...

Ruth's Chris Sweet Potato Casserole
For the topping:
one-half cup brown sugar
3 tablespoons flour
one-half cup chopped nuts (pecans preferred)
2 tablespoons butter, melted

For the sweet potato mixture:
3 cups mashed sweet potatoes (about 6 medium sweet potatoes, baked until fork tender, then peeled and mashed)
1 cup sugar
one-half teaspoon salt
1 teaspoon vanilla
2 eggs, well-beaten
one-half cup (1 stick) butter, cut into small pieces


Combine ingredients of topping mixture in mixing bowl, and set aside.

Combine mashed sweet potatoes, sugar, salt, vanilla, eggs and butter in a mixing bowl. Combine thoroughly. Pour mixture into buttered baking dish.

Sprinkle the sweet potato mixture evenly with the topping mixture. Bake for 30 minutes at 350 degrees. Allow to set at least 30 minutes before serving.

Serves eight.
 
Sounds like you could just put it in a crust and have Sweet Potato Pie.
 
We make this and the topping is what really sets this off..... Great Stuff!
 
I have made this from various recp's on the net and it is great. First time we had was in Aruba at Ruth's and have made it twice. Awesome, but very very sweet!

It goes best with a medium rare filet! :mrgreen:
 
Sounds like my sweet potato casserole except I make a custard with the eggs and some heavy cream...will definitely try this one if I can skip that step :)
