Rack of Lamb served with Twice-Baked Potatoes with Roasted Garlic and Cheddar cheese and Sauteed Garlic Asparagus.That's a lot of garlic! This is going to be a tasty meal
Lamb in to the marinade for 3-hrs. in the fridge.
Roasted the garlic for 1-hr and set aside and baked 2 potatoes
I'll bake them again when I start the grilling the Rack of Lamb
Seared on the lower grate and finished them on the raised grate
While the lamb rested Jackie sauteed the asparagus and the potatoes back into the oven
This was a very wonderful garlic meal how could I go wrong
Marinade
Recipe:
1/2 C Olive oil
1/2 C balsamic vinegar
1 C Port Wine
1 whole sweet onion chopped
1 Head Garlic
Rosemary
Fennel seedy
1 T Spice Hunter Steak & Chop Grill & Broil Blend
1 T Spice Hunter Lemon Pepper
1 T Trader Joe's 21 Seasoning Salute
1/4 C Mint Sauce
Put all ingredients into a blender and pulse, put into a plastic bag with the Lamb Chops to marinate into the fridge. Min. 1 hr.
