First, just wanna say thanks to everyone for all the information/help/support. Been perfecting my drum skills, and thought I should post some proof.

Did my first overnight smoke on the UDS. Felt comfortable in its temperature consistency and long burn times, so figured the time was right to test the autopilot.

Did a 7# butt trimmed of fat, mustard slather and magic dust rub. 2:1 Nature's Grilling hardwood briquet to chunk hickory.

Posted a couple pics of my setup, some parts of the cook, and the end product.

So where is the "Pork on Pork"??? I only see one pork....I thought maybe you had some ribs or something else on.
 
Looks good! Soon I'll build up the courage to try an overnight cook myself!

Nice!! I like the bottle opener. I've got one ready to mount on my current UDS project.

Lil off topic......THose of you that use a therm to monitor pit temp. I have two nexxtexx therms and have never used one to actually monitor the pit temp cause I figured it would burn out. Do you need a special kinda of therm or probe for monitoring the pit temp, or can you just use a regular wireless therm and probe?
