Here's a couple pics of a pig we did last weekend for a friends wedding reception. Started out at 175 pounds on the hoof, cooked for 12hrs with rancher charcoal and hickory chuncks till it was 175, remove the charcoal pan, drove to the party site, finished it with the gas till it was 190, Let it rest for a hour and half. Turned out pretty good. Everyone was happy. I think it could have used alittle more injection, used the chris lilly injection.
