You might call the Local Pig (in the east bottoms) http://thelocalpig.com/ a week or more before you come. They will cut ribs as thick as you like BUT they only buy whole pig carcasses so you have to reserve your slab(s) ahead of time.

Bichelmeyers (in KC, KS) won't run out of ribs... http://bichelmeyermeatskc.com/ Their meat isn't in cryovac so you can inspect them easily.

Paradise Meats http://www.paradisemeats.com/ in Trimble (About 20 mi. north of KC) provides meat to a number of the restaurants in the area. They butcher most of the meats they sell. If you don't want ribs in Cryovac, call them ahead of time to see what you can work out. I've called ahead for custom cut steaks but never ribs.
