I'm not sure if I'll be able to pull off an entry this week or not with all I've got going on. But I'll for SURE be hanging around to watch and vote!

Pollo Asado en Mole Rojo

First made some mole coloradito and rice with hatch green chili's/green onions.

Made a glaze (reduction of 2-1 mixture of mole and agave) for the chicken.

Seasoned chicken (2-1-1 mixture of salt, pepper, cayenne.)

All glazed and set on the Keg waiting to hit a nice 165* internal temp.

Plated with black beans, rice, and chicken surrounded with mole and sprinkled with roasted sesame seeds.

Love latin food

These are gonna be tough to choose.
 
Mojo Marinated Cuban Pork

So we did some Cuban pork on Sunday with some traditional sides.

Mojo marinated boneless pork loin
Black beans and white rice
Fried plantain bananas
Fried sweet potatoes

Marinated pork


On grill



At 120 I pulled the diffuser and put it down on the sub grate to get some color


Primal or what


Pulled at 140 for a carryover to 145 then rested and sliced


PLS USE THIS PHOTO - Final plating


Cuban Mojo Marinade

2 ½ cups vegetable oil
2 cloves crushed garlic
3/4 cup sour orange juice (or ½ orange-½ lime juice)
1 tsp ground cumin
1 tsp oregano
1 tsp chili powder
½ tsp onion powder
¼ tsp cayenne
Ksalt
Black pepper

Heat the olive oil in a saucepan, add the garlic, and cook only until fragrant. Add the remaining ingredients (be careful it may spit at you). Bring to a full boil then cool and pour over pork.

Well, someone suggested this morning that I make a chicken Caesar salad. Afterall, what could be more Latin than that? But, I was really craving a burger. I seasoned these and added some ancho chile powder:

I really like chipotle and I love green chiles on burgers. I covered the top of my burger with smashed chipotle and grilled the green chile with the burgers.

Not exactly most people's idea of Latin Quisine, but I really wasn't in the mood for a salad. :rolleyes:
