Did a quick indirect tri-tip today. Cooked indirect to 115, then seared a few minutes a side to get it to 130. Rested for 20 minutes then devoured. Rubbed down with the Rub Co. Santa Maria rub. Used Stubbs and a fat chunk of oak. Sorry for the crappy cell phone pr0n. Life is good. :thumb:
