Got bit by the smoking bug about 4 months ago, and been smoking ever since. I have a Brinkman trialmaster limited edition with some modifications. Installed sone 1/4 steel tuning plates, gaskets and latches on the main chamber, and a home made charcoal basket. Also RTV siliconed all the joints.

This unit has served me well for learning as I have done ribs, pork chops and pork steaks, fatties, meatloaf, 9lb brisket, and just did 3 8lb pork shoulders for my sons birthday.

Now to the really good news. Today I just ordered a Lang 48" patio smoker. Should be able to pick it up in 3 weeks.

Welcome fellow Floridian, come on in, take your shoes off and sit a spell.
