Hey guys I'm Joe from Phoenix AZ. Cooking an 11 pound packer on Pit Barrel for my daughters 10th birthday today. Started at 5 am coming along nice color so far. I injected with Kosmos reserve blend. Rubs are Kosmos dirty bird hot, cow cover, and Texas beef. I will post some pics of the cook.

I think you are in for a treat! Can't wait to see how it turns out, looks great so far.
 
I forgot to take a pic before wrapping. But wrapped at 170. Used Kosmos brisket mop and beef consume. It smelled amazing. Back on the smoker hopefully another 2 hours. The pit barrel did a good job. It only took 2 1/2 hrs to get to 170. Serving at 3 pm today so there is plenty of time to rest before cutting.
