Made some legs again for my Mom.
They were brined in pickle juice,chardonnay,apple juice,soya sauce,Sishado BBQ marinade,salt.
Rubbed with cayennepepper and Phoil Hat rub...smoked on some lump,coco briqs and a disc of oak...

This is one very complicated marinade, did it turn out real spicy?

Not spicey with heat.
The chicken soakes up the sweetness and saltyness pretty good with all those acidities in there.
It makes the meat inside more PhlavourPhul...I don't use brine to make the chicken moist cause it always comes out moist when you pull it at the right temp.


That's some fine lookin' fowl! Was there mopping involved?


No mopping...brining/marinating with some soya sauce can give you a nice brownish colour on your chicken.
