Well after the Clermount comp, not being able to slice the brisket into one slice--We broke down and ordered a Forschner 14" Cranton Slicing knife....
The Cooks class (FBA) that the gave was very helpful....
Now try and improve out cooking method. Thanks to all for the Help.
 
Be sure and post pics. I hear they will slice through anything.

I just got the 12". Great knife! The only problem I have now is figuring out how to keep it sharp. I suck at sharpening.
 
Pat, you gotta have the largest library of weird pics I know of!

Practice Practice Practice.... lol I finally got the hang of it working on old knives around the house... now EVERYTHING is razor sharp... my wife is sooo pi$$ed.
 
I use a Chef'sChoice Professional Sharpening Station #130 the #120 is very good too. It saves a lot of time and effort for an awesome result.
