I've been using a lot of the venison from last season.

Made a batch of Andouille the other day with some of the stash.
I like to use pork fat with my venison...
made a slurry with one cup of beer and the spices, mixed and the let the venison Andouille chill overnight.

made a braid for a friend that's been helping me.
wanted to make some Hoppin John so I sautéed the onions, garlic and seasonings, added chicken stock and some of the venison Andouille. Then let them simmer in the drum.
I used the BPS drum and raised the hot coal rack to the top level.
grilled the venison and added rice and beans to the stock. (used pintos, I was out of black eyed peas)
made a batch of jalapeno cornbread in the drum too.
I ran the skillet of cornbread under the broiler to brown the top a bit more.
the venison Andouille, hoppin' john and jalapeno cornbread...
It was pretty tasty, had a nice kick to it.
Made some venison hash the next day by frying potatoes, garlic, onions and cubed Andouille...
The Andouille added a little bit of heat to the breakfast. I liked it!
