Relish trays?

I am looking at a 250 person setup. The client asked about relish trays with carrots, celery. broccoli, cauliflower, and olives with ranch dressing.

How much per person and cumulative total??

One of the appetizers we offer is a vegetable crudités platter, It includes pretty much what you mentioned with peppers, cherry tomatoes and asparagus (seasonal) added.

I've never cooked this alone, mostly with other apps but I figure about 4-6oz servings for appetizers.

Veggies are light so this will be a boat load.
