BBQ Brethren Throwdown - "Quesadillas"

Here is my entry, started out w/ a warm performer and a pound of bacon

Carmelized a couple onions and some shrooms

Then threw on few lbs of thigh meat

Used a large tortilla, a layer od refried beans, lots of bacon, onion/shrooms, colby and mont. jack cheeses and chicken...w/ fresh cut avocado, salsa, sour cream and chives...yeah..it was good

Ok here we go. These are my Triple Threat Quesadilla's w/ Tequila Lime Salsa. I start by browning some Chorizo. Then I sautéed some Jalapeño, Onion, and Red Peppers on the grill. Grilled some Chicken and began to assemble.

Never made one of these things and a lot of really nice throwdowns here but it's fun to do. Used some smoked game hens from last nights cook and shrooms, bacon, peppers, cheese, salsa, and probably something else or two. Anyway, really tasty and fun. OBTW, the last pic is my avatar's little buddy. He hasn't swiped anything that I know of yet.

Here's mine...

Had forgotten about the throwdown, made quesadillas for breakfast, so I thought, "What the heck, I'll throw this down..." Made from leftover smoked Beef Tenderloin, cheese, onions, green chili peppers, Habenero Sauce and LaLa's Tortillas!

Another great bunch of entries this week!

Mine is just a Classic Quesadilla with Cheese, Onion and sliced Jalapeño.

Sauteed some Jalapeño slices in butter also did the Onions as well.

sear for 90 seconds a side

Well, now shes back and exploded on to a 10" flour tortilla to make my entry for this weeks Throwdown!

She brought along some rice, corn, sour cream, cheese & hot sause splashed all over her...yum!

Here's a grilled pork chop quesadilla with brie, sauteed apples, roasted bell peppers, sauteed shallots, crispy fried prociutto, and roasted pine nuts. It was served with a queso sauce made from queso blanco, half and half, green chiles, and some of the quesadilla scraps. For a side, I made a tomato, grilled portobello mushroom, and cucumber salad tossed with balsalmic vinegar.

Whoa! That quesadilla is the motherlode!:shock::cool: I can almost taste it...tastes kinda like monitor though.
