Just wondering if a cryovac wraped full packer brisket will keep for 2 weeks in the refrigerator or do I need to freeze it for a week?

It will keep. It's called wet ageing.
It really depends on when it was packed. Lots of guys wet age briskets for up to 50 days after the pack date. If you don't know the pack date it's a crap shoot. If it has a 'use by' date from the store, those are typically 30 days after the pack date, but not always.
