I have a CG with SFB I usually cook my ribs at 250 for about 4 hours using the 2-1-1 method. They turned out pretty tasty. But I do not get that definate pink smoke ring. The meats is pink all the way through. I put apple wood hunks on when I put the meat on. Any suggestions would be greatly appreciated.
 
I forgot to ask how long are you letting the rub sit on the ribs? If you let it sit a couple hours on the ribs you should get a smoke ring.
