Judges: Grilling Desserts

Hi,

When you are judging a grilling event and a dessert category is coming up, what do you hope makes it to your table? What dish do you look forward to? Apple pie, grilled fruit, pig candy, etc.?

I'm looking forward to whatever the teams turn in. I like to see how creative the teams can be. I also consider it research for when I need to turn in desserts.

But cheesecake is always a favorite.
 
I have only judged one dessert ancillary but here is what I look for:
1. Home made. (There were 2 entries that had a store bought look)
2. Flavor. Wow me and get a 9!
3. Creativity. Lots of folks turn in cheesecake.
4. Make it look good.

If it's a grilling contest then try to get grill marks on something even if it's a garnish.

I certainly hope you didn't score down for not looking homemade. I have seen some dessert turn-ins that looked as though they had been made in the kitchen of a 5-star restaurant. Especially at the Jack Daniels Invitational.

It came on the the cardboard base that the super market uses and there was an impression left on the side of the cheesecake from the paper liner.

Yeah I scored it down! :tsk:
 
Bread pudding and cheesecake seem to be the norm. I like to see something a little different...a pecan pie, pineapple upside=down cake, crepes...along those lines anyway.

Having said all that, we turn in cheesecakes when we compete. They seem to win the majority of the time, plus my wife makes an amazing version on the smoker.

Do you have any idea how difficult it is for a competitor to create that cardboard base and embed that impression on the side of the cheesecake?

That takes major skill!

This is clearly an example of why we need better judge training.

Cheese cake or tall chocolate cakes get a lot of visual attention, judges heads craning from their tables. In general I think the deserts that are visually strong have a leg up.
I've had mostly cobbler types, though a fresh fruit tart stands out fondly.
