OK here are the players - a grill pic lol



Now here is the recipe, for those of you with the book, pg 225 of Serious Barbeque

Rack of Lamb Crusted with Grain Mustard and Chilli Powder

4 racks of Lamb, not frenched, well all they had was frenched sooooo...

Seasoning Blend:
1/4 c chilli powder
2 tbls Sweet Paprika
2 tbls firmly packed dark brow sugar
3/4 tsp garlic salt
3/4 tsp coarsely ground fresh black pepper
3/4 tsp kosher salt
1/2 tsp cayenne pepper

Mustard Mixture:
1/2 c whole grain mustard
1/4 c water
1 tbls worcestershire sauce
1 tbls thyme leaves

about 1/4 c canola or vegetable oil
Fleur de sel (fancy sea salt)

Herb Dressing:
2/3 c evoo
2 tbls freshly squeezed lemon juice
1/2 c finely chopped flat leaf parsley
1/4 c finely chopped chives
1/4 c fresh majorum leaves
1 tsp finely chopped lemon zest
1 tsp kosher salt.

Figured I'd start this now as when I get going I won't have time to post all this :heh:

Well you guys have a bit more time to get here.
I had to postpone the cook until tomorrow.
Gotta have a plate for Santa..............er sumthin...........:tsk:



Titch, that's flavor Brother if I was feeding it the chops would be way bigger than that :laugh:
 
OK sorry this is so late, but there's life in the way sometimes.

Here's the dry ingredients and the mustard sauce



Both mixed together



Slathering them on the lamb



on the grill indirect at 250f



resting after 45 minutes



And here we have dinner served!!



There were absolutely amazing and the finishing glaze which went on just before plating was just icing on the cake!!!!!!

Thanks, yeah I shoud've got the fork shot :doh:

The price wasn't that bad really, and it was supposed to be for my son before he took off for the holiday, then for Christmas eve.............but it was really out of this world good
