I saw your explanation of why you posted this twice. What happened to offshore and morgan ranch?
 
nothing happened to me. As my name implies - I work offshore and have been flying out and back placing drilling ships on location and installing first oil jumpers as of late. This is swoles thread and I wont get involved.

I text Scott (the Morgans guy) about buying some of those Wagyu burger patties that he sent me. Have to buy in bulk. I cooked two of them tonight over the open fire of the firebox in my Offset. WOW!!! Great tasting burgers!!

Cheez59 (John) and I will prob. split a case when I can afford to place another order.

That's what I thought too. I cooked one like that one. after trimming all the brown off it still tasted bland. But mine had been in the freezer over a year iirc.

yeah, this is the one that was loose cryo. I assume it is fine and will taste fine. Smelled fine, so I went with it.

Thoughts?

Well Adam answered his portion..lol He and I stay in touch like any other contact. He's putting me in touch with his pork guy but I have to wait for now, due to the expenditure on these briskets.

Soon as I get a deep freezer, I'll order up a good bit to stock it.

Like I said earlier, I've been in touch with Scott once or twice lately. I wanted him to skim over the thread in case he wanted to clear anything up. Not sure if he ever did or not. But he did reply about the burgers. Going to order a case to split with John soon as I can spare the "Cheez"!! LOL

Pun intended John!!! lol
 
ill add - ive never received one of these with oxidation. Typically - oxidized meat albeit doesn't look attractive is perfectly fine according to the USDA (thats really subjective if you ask me). Makes me think like these guys previously pointed out - the cryovac was loose or compromised and I'd expect another in return. I'm anal like that though. Perhaps hell reimburse you with something else in the future?

Pretty sure it didn't stink like you said since it's on the smoker already. It'll be fine. Either it sat too long prior to factory cryo or sat it the fridge too long with the loose cryo pack.

I just didn't have good experience with meat like that like PJ said.
