1st overnight cook on Rebel 28

Maiden overnighter for the Rebel. Still learning and making mistakes. I called rip at Rebel and asked why my smoker stoked to 400 degrees when I had the IQ set at 225? Great customer service and rip set me straight. Food probe goes in food plug in, smoker probe in smoker plug in. IQ thought the smoker was at 38 degrees. Once I switched probes, the Rebel slowly moved down to temp and held there the rest of the night. Felt dumb but a mistake I wont make again. I took some nail polish and marked the smoker probe and smoker port.

That being said, She held temp for 15 hours. Pulled at 196 IT. Wife said best pork I ever made. My mistake may have been a blessing in disguise? Start hot first hour and then slow? Only more cooks will tell for sure. :becky:

anyways great end result. Those look delicious, keep us updated on if the "mistake" was a blessing in disguise or not.

Very Nice color on dem' pork booties. Looks like it wasn't a mistake, but more of a "Happy Accident" :thumb:
