PBC Eye Round

Around 9:30 last night I seasoned an eyeround w/ PBC's beef rub

Hooked it up on the Pit Barrel Cooker

And had a delicious midnight snack.

A few things to note:

The charcoal I used was from a bag that I accidentally left outside and it had been lightly snowed upon.

The temperature was about 30 degrees during the cook.

I didn't have enough charcoal to fill the basket. I was at about 90%.

It took about 90 minutes to get the meat to about 130.

The recurring theme of each of my PBC cooks is that the meat is exceedingly juicy.

That looks great. Why did you choose to hang it horizontally instead of vertically?
 
Aside from messing around w/ different styles, I didn't really have a reason. I'm still in the experiment phase w/ the PBC.

Looks like a perfect medium rare. Caramelisation as it should be!

WOW that looks good. I could care less how it was hung in the pit as long as it's hanging off my fork:-D
