First Brisket Cook on the Lonestar

27 degrees this AM but stuck to the plan to do my first cook on the Lonestar.... Temps supposed to rise to upper 40's later on.

This brisket is one of two I bought from a local farm. ~12 lbs. Trimmed and then rubbed with kosher salt, black pepper, drop of garlic powder and then a dusting of Cow Lick.





 
About 4 hours in now...

started slow ramp up 225 for first 75 min... running ~ 270 now. Mix of oak and hickory.


Your cooking brisket in N.C.???

Hope the lynch mob don't get to ya before that baby's done! ;)
Bubba - If the brisket doesn't get me in trouble the jalepeno and cheese sausage just might.
 
That looks Damn good! I took ribs out this morning. Now I'm thinking I shoulda grabbed the brisket.
