Wind follow up

So the gasket arrived yesterday and we were able to seal the gaps on the smoker. Unfortunately we are still finding that it has trouble getting above 220. There is some wind but not like it has been. What can we do to get the heat up? We have charcoal and pecan wood in the fire box. Do we just need to keep feeding charcoal?? We're stumped and frustrated. Help!?!

SUCCESS!!! We figured out the problem. The firebox was not getting enough oxygen. We had the vents open but that still wasn't enough. On a whim, we opened the door up completely and voila, the temp started increasing. So now we know how to fix the problem of the smoker not getting hot enough and it's just a matter of regulating it to keep it from getting too hot or out of control.

It's amazing what a good beer and some perseverance can do!

We have an offset Brinkmann Trailmaster. Mike was ready to kick it to the curb about an hour ago. Now he's a-ok!

Establish a Coal bed and feed it Wood maintain a Small hot fire. Off set cookers don't run well on Charcoal Especially the stuff in the RWB poke with that "K" word on it. Make sure the base of your fire is at or above the middle of the intake. Keep the stack WFO.

:thumb::thumb::thumb: Charcoal doesn't burn as hot as wood, creates more ash that will clog the airflow under the fire grate and is not the proper fuel for an offset cooker.
Follow Bludawg's advice. Start with some lump for a quick coal bed and then feed it nothing but splits from that point forward.:wink:

If you burn wood instead of charcoal, you'll get to close the firebox door and adjust the heat with the intake damper.:-D
