Tender Moist Pork Steaks & Chops (How To)

Took these out of the freezer this morning to thaw. Not much to getting a tender Chop or pork steak. Got to get up off the heat 8 to 12 inches with hot burning coals. You don't add the sauce until you are reaching the end of the cook. Just take apple juice and puddle in on the chops or spritz them with each turn right up until you apply sauce. 2 of these I only did with my rub 1/2 hour before going on. All were moist and very tender, My word on that.

lookin good I had Pork steaks yeasterday and Chops a few days ago, just got the hogs back from the slaughter house
 
I have a problem getting chops tender. You say puddle with apple juice? How often do you flip them? How hot are the coals? How long do you cook them? Would foil help? Anything else Ineed to know?
