Thanks everyone! If you have not tried cornish hens before, they are terrific. I brined them for about 18 hours in a simple salt /sugar/ cane syrup brine. Used the mini coke cans filled with apple cider to stand the birds on and cooked away. Incredibly moist when they came off the pit.
