Ingredients: (From Chef John on FoodWishes.com)
2 cups Greek yogurt
1 large cucumber, peeled, grated, tossed with 1/2 teaspoon of salt
4 cloves garlic, very finely minced
juice of half a lemon or vinegar to taste
3 tbsp. chopped fresh dill and/or mint
salt, pepper, to taste

Peel and seed the cucumber.

Coarsely grate it into a bowl and add salt and let it sit for 10 to 15 minutes to leach out the liquid.

While that’s sitting scoop out the Greek yogurt into a bowl and add the other ingredients



and stir.
Now take the cucumber and place it in a cloth napkin and ring out what ever liquid is left and then add it to the yogurt mix and stir.

Let it sit and get happy for a minimum of 2 hour but overnight would be better.
 
that looks terrible....but i dont like any of the ingredients so......:laugh:

Umm....where's da beef? Or any meat protein for that matter.

Here is a real recipe.

3oz dried beef (finely chopped/minced)
16oz sour cream
8oz mayo
2 tbsp dill weed
2 tbsp minced onion
2 tbsp parsley

serve with cubed pumpernickle or rye bread
 
It's good stuff- but it needs something. Put that in the fridge for a couple of hours. Come on back with it after you grilled some chicken or lamb kabobs w/some grilled vegs on the side.
 
Tzatziki is great on just about anything. It goes good on the baked potato beside my steak or just for dipping into with fresh bread, chips, fingers etc. Never made my own but should give it a try.
 
Yup good stuff I use it for lamb and grilled chicken. I also like it over rice and as a salad dressing. Time to make some Gyros!!
 
It's good on pork or chicken souvlaki, or a dip - very fresh.
Yours looks delicious husker.
 
Love that stuff! Mrs. Shadow adds in just a touch of cayenne pepper for a small kick in the pants. YUM!
 
Looks good! I'm probably making some during the week. I like to combine everything except the dill and let it sit overnight. It mellows out the garlic. Then I add the dill just before serving. I use fresh dill for this, however. With dried dill I would probably add it in with everything else so it has a chance to rehydrate.
