Good job on the video. IMO the seasoning is dead on. Like you said it should be spicy but not overwhelmed by the cayenne.
 
Nice! I made up 15 lbs of andouille yesterday. It's in the smoker right now.

Very well done. I have been making sausage for a long time and that video really would have helped me out 10 years ago.

How do you like that grinder? I have the Cabelas Pro #8 (the vertical one, not horizontal like yours). I find it under powered and have been thinking about upgrading.

My grinder has trouble with doing a hamburger grind unless the meat is basically frozen and in small chunks. It works well for the coarse grind stuff I normally do though. I have yet to bog it down from a heavy load. If I had to do it all over again I would get the LEM grinder with the big bite auger or the #12 electric grinder on Northern Tool.
