Cryovac Spares

I've ordered two cases of cryovac spare ribs from my boss. How long can they be in the fridge or freezer for before they are undesirable to smoke?

ttt? I think if the ribs were recently packed, you have a couple weeks. I would consider freezing what you don't have time to eat right away.

I'm sure they will have a date on the pac, plus one thing about pork it will tell you loud and clear when it's ripe! I usually try and get them smoked no more than 3 days after getting them, usually from Sams.

I try to avoid getting to this point, it ain't a good thing.
