Left over smoked chicken, tomato, onion with some cheese and cilantro added.

Add a little of my spicy mayo, some jalapeños and a little parsley garnish and dig in.

Try this curry chicken salad sometime too

3 smoked boneless/skinless chicken breasts cubed
2/3 cup whole milk yogurt
2/3 cup sour cream
1 tbs curry powder
1 tsp garlic powder
1 tsp mustard powder
1 tsp salt
1 tsp black pepper
1/2 tsp Indian hot red pepper
a few dashes of hot sauce
diced 1/2 red bell pepper, 1/2 red onion and 3 shoots of celery and two hands full sliced calamati olives.
Mix and leave in fridge 24 hours

Hah. I just made chicken enchiladas with leftover smoked chicken. This looks like yet another delicious use of the bird.
 
great idea. The wife took some extra and whipped up some Chili with it the other day that was outstanding.
 
I so should not be trolling through the forums right now - just had my tonsils taken out this morning and I'm starving and seeing posts like this - just ummm has me ready to chow down. That looks freaking AWESOME!
 
Looks fantastic. Because I cannot leave something good enough alone I'd add crispy bacon bits. In my view most things taste better with bacon!!!!
