My first try on the Memphis Pro

I finally had the chance to try out the new Memphis Pro. I'm not familiar at all with pellet cookers so this was a learning experience.

I butterflied a pork loin and did a quick overnight cure using tenderquick and turbinado sugar.

made some sausage using beef, pork, beer and seasoning..

rinsed the cured loin and covered it with sausage then topped with minced onion..

I put it in the Memphis Pro on the middle shelf and used a drip pan below ( I didn't want to get it dirty :redface:)

smoked using apple pellets at 275F

when the loin reached about 165 degrees I pulled it off the cooker and kicked up the heat to 375 for a skillet of jalapeno cornbread.

the jalapeno cornbread came out nice and brown on top. :)

the loin was moist and tender...

lol Pat..this is the pellet pooper pork I told you about.
I've been keeping it nice and shiny. :-D
No bacon on this one. it's too messy! JUST KIDDING :wink:

That looks great Jeanie! That's funny about not getting it dirty. You will sooner or later cause you cannot stay away from the bacon thingy. LOL Take care and glad you are enjoying your new smoker.
 
Here are my questions:

How long did it take for you to mine the ore, smelt the metal and fabricate the grill?

What trees did you grow? And what tools did you use to whittle the pellets?

What corn did you grow and grind for the cornbread?

And last, how long did it take you to cast the skillet?

That is all...

Super nice cooker ya got there Jeanie. Did you buy it, or was it a gift from someone that enjoys your cookin? That is a great lookin loin ya made there. bet it was tasty :tongue:...

Ron, Thank you! I appreciate the tips. I lined the grease pan with foil.... I'll line the deflector too. :thumb: lol I know... it's going to get dirty sometime. :-D

See I always thought that a dirty/seasoned grill was to add flavor to the cook! I guess when you drop that much dough on a grill the rules change! :becky:

BTW I'm drooling over this fancy pellet grill/smoker.:cool:
