Yup that picture is before I sauced em, covered em, and put em back in the pit.After another hour they are crazy tender and the gristle is almost gelatenous, delicious!Nice, that is some HD goodness! Those ribs look amazing, if you dont mind me asking what do you do with the tips? Just plate them and serve?
