Bought one at Publix yesterday. First time for me too. Talked to the butcher and he said they don't usually put them out but they have them in back if anybody asks.
They are close trimmed and he said that's the way they come to the store so I'm a bit worried about it drying out. I'll be looking for advice on the best way to do it-probably next weekend.
Certainly, should be picking one or two up on wed. I looked at them yesterday, and they looked a bit smaller than compared to what I've seen others do here. I'll be trying it anyway.
