Had a strong craving for Tri-tip last night, and happened to find a choice specimen at Ralphs, which is somewhat unusual. Nonetheless, it saved us from a trip to the madness known as Costco.
Here it is after 1.5 hours with a reverse sear over oak:
As soon as I began slicing through that meat, an idea began brewing:
