Anyone see the episode where Guy was in Santa-Fe and at the Roadhouse they made Scrapple from Pork-Butts & Pollenta? The way that lady described it, A croos between Sausage and Hushpuppies. Man that sounds good. Does any one have a recipie like that one?

I do!
I made some this fall using pork butt and smoked sausage. If you are intertested, I can get the recipe to ya.

I just had some for supper the other night. I like it rolled in flour and fried kind of crisp. It's good with maple syrup too. :-D
 
If it doesn't have the foulest stuff you never want to eat in it, I don't think it's fair to call it "scrapple".
 
I want to use it to make Pig Balls.

Use a mellon baller to get round balls, Deep fry them, freeze em. Make Pork version of Moink Balls for snacks at comps.

If it is made from the "good" cuts of pig, instead of the scraps, it is called
"City Scrapple"
