Just a two pound tri tip. Have it oiled up with SPG and in the fridge. Off for a little nap then a quick hour or so cook. And the wine will flow freely.

Hey dudes, dudettes, and DR PHU......late to the party I know...had family in from out of town.....wasn’t going to do much but then that DARN STINGERHOOK put up those wang pics.......guess since he doesn’t do take out I’ll have to do some VERY WEAK impersonations of my own......cheeers everybody...hope everybody is well and happy...GEAUX SAINTS!
In a follow up to the wedding I attended that was catered by a BBQ restaurant, the sides were the best items, all southern foods, but the pulled pork and pulled chicken were dry. I would have been embarrassed to serve that to anyone, let alone charge for it. The only sauces they served with it were a chipotle and a habanero, nothing mild, so I had to go to my house to get a mild sauce for my daughter to eat on her pork. Very disappointing.
