tri tips, hamburgers, hotdogs and 2 sides

my question is how many tri tips will i need for 400ppl? buffet style

You will get around 8 servings per normal tri-tip, assuming you can get 2.5 to 3 pound whole tri-tips. There is not a whole bunch of loss on poundage, and with other items to eat, I would think 1/4 pound per person would be adequate. Let's assume 2.5 pounds raw, you will end up with around 20% loss, so 2 pounds cooked. That would be 8 servings, 400/8=50 tri-tips or 125 pounds raw weight.

I think that Landarc is talking about "peeled" tri-tips----which means that the fat cap has been removed.

Tri-tips used to be called "trimmed" and "untrimmed"-----now IBP and most companies are calling them all "trimmed"----but the ones with the fat cap removed are marked "Peeled"

If you use tri-tips that still are carrying the fat cap----there is a great weight loss while trimming and you will need more meat and more labor, but the price per pound drops.

I think that Landarc's numbers are right on
