Made a CostCo run today and bought one of the huge packs of the slightly-trimmed TriTips. about 42.60/pound less than the two packs. Kept one out and vacuumed the rest. Now I have one for tonight and seven in the freezer!

Trying a new approach to seasoning it. Rubbed with a coating of coconut oil. Then Black Pepper, White Pepper, Himalayan Pink Salt, and onion powder/garlic powder mix. Will cook with the usual reverse sear on the Blue Performer.

Just put on. Doing a reverse sear. See the little cast iron grill thingee that is right over the coals for the sear.

I really like your simple, but tasty choice of spices. I bet that's gonna be good.
 
Nice buy, classic choice of spices. Coconut oil is a little different though, I bet it chars up nicely
 
Done and pretty tasty. The sear worked well with the coconut oil. VOwerall one of the better TriTips I have had. Beautifully tender and delicious!
