Unsanctioned Garnishes

We're entering an unsanctioned Brisket cookoff and I'm looking for ideas as to garnishes. We've had limited success with KCBS style garnish in this event in the past so I'm looking for an edge. I'm thinking about sauteed peppers and onions or something like that. Any suggestions?
 
An easy one that looks nice is to take fresh scallions (only the green part, discard the bulb) and cut individual 'stalks' and lay a single row of them across the bottom of the box. It gives a nice green frame like parsley but only takes a minute to make.
 
That does sound good but I'm not sure if it will be wild (colorful) enough for the judges who purposely judge garnish:roll: The nice thing is I'll only have to build one box.
 
Kale with some small colorful veggies thown in. I suspect Kale isn't a legal KCBS garnish because it's simply too easy to make it look good.
 
Kale all the way. Cheap, easy to arrange and absolutely will not wilt.
 
20's would be too easy. Make a nice base out of spare change. It will have a nice tiled look when you use pennies and dimes.
