I was filling up with gas a few days ago in Texas and got to talking with a guy who owns a BBQ catering and vending business. He said for the most part brisket has been king in Texas but pork butt is becoming more and more popular. He said the high price of beef in many places is opening the door for pulled pork to be more accepted. Though pork prices aren't exactly "cheap" either. But he said he's started putting pulled pork on his menu and it has done quite well.
 
There's nothing wrong with pulled pork if all the brisket is gone.
 
I too have not been cooking a lot of briskets due to price. Pulled pork is great, but I do miss my regular brisket cooks.
 
Briskets are cheap in Texas. Not as cheap as butts but still reasonable.
 
I rarely cook beef anymore due to the high prices. Nothing can replace the flavor of beef, but pork done right ain't bad for 1/2 the price.
 
The rest of us eat brisket, so I don't see why TX can't do pulled pork.

My kid loves bbq lamb and we're not from KY, so I say if it tastes good, smoke it

because even the best pulled pork cant even get close to a decent brisket...
 
For every 10 briskets I smoke, I might add a butt just because...no one eats it until the brisket is gone :)

Brisket will always be king...
