Got an itch to make some smoked salmon. Headed to Sam's and found some nice looking filets. Cut them into good sized pieces and into a dry cure for the night. Smoked them the next morning at about 180-200 for maybe 4 hours. They came out with a beautiful glaze and good...but not too strong....smoke flavor. Smoked 2 untrimmed racks of spares after the salmon for the in-laws and a buddy of mine. They were pretty happy with them.

It looks awesome, can I ask what your dry rub included for your salmon?

I usually prefer grilled cedar plank salmon on a kettle, but those pics are making me want to try smoking some :)

Thanks for all the kind words....the cure is salt, brown sugar, some granulated garlic and black pepper. It turns into a syrup overnight and coats the fish really well. Didn't get a chance to vacu-suck any of it...it didn't last that long...

Looks sooooo good!! Thanks for the post!

Nice looking Salmon! How do you get heat down? Just closed up the vents more? I'm assuming you're using the UDS?
