I like it when you can look at a COOKED ribeye and tell it had great intramuscular marbling. Nice.


thanks. these were great. i usually have to buy "nature well" (which is what these were) to get any decent marbling in any of the beef i buy down here, although i did get a real nice one from target(?) a couple weeks ago.
 
That is an awesome looking meal you got there. Thanks for sharing....and making me hungry for steak. I know what I want today now...but it is at home frozen! :doh:
 
Those look great, did you make the veal demi from scratch or buy it somewhere?
