White.... "Sawmill" gravy... with lots of hot sausage, and a little bacon in it just to be different. I make a med. blonde roux for the base.

If I ate that platefull, I would be a leep in 15 minutes and sleep for 3 days.

Sawmill at home. White if I get a choice when ordering.

I'm not eating anymore B&G now that a know it could turn me in to a Leep.
 
Not to sound stupid, but when it comes to sausage gravy (not sawmill or red eye), isn't white or brown just a matter of how dark you take the roux before thickening the gravy?

I like it eaither way, but if I'm making it at home is will be brown.
 
White or brown has something to do with whether is uses dairy products. Willkat's example is gravy with flour and beef bits.

I found my favorite sausage gravy starts with a base of finely chopped fatty, then adds flour and milk to thicken... Yum!
 
White gravy with black pepper for country fried steak, the same with lots of sausage for biscuits, and brown for everything else. And the color of the roux makes the color of the gravy. The darker the color, the stronger the taste.
