After going to the shooting range on Saturday. I came home late and decided to stay up and smoke some pheasants.

Cherrywood, no rub, 2.5 hours, honey the last 15 mins

Then today I had planned on doing a prime rib

5 lb roast
Garlic, salt, pepper
smoked with one medium size piece of red oak
2.5 hours internal temp of 120
10 mins sitting
20 mins in oven (set to 400F then turned off and set roast in)

my first time doing either. So I am just glad I didnt ruin them. lol

I found that the red oak I used has a little more potentcy than the regular oak i previuosly used. So that is good to know for the future.

Everything tasted great. Tender and juicy. I have a tweak to make in prep for the prime rib and a cooking tweak for the birds. But overall I am my own worst critic, my wife and I have loved everything I have made so far.
