If you can get a couple of collapsible cooler bags from Sam's you should be able to split the pork between two bags. If the product is frozen it will be just fine when you get there. Put one inside one of your checked bags if you don't have a weight issue, and carry the other one. I know you won't have a problem checking it. Double check with TSA prior to going to the airport about the carry on, but it should be fine.

Do NOT use dry ice. It's considered HAZMAT.
